Join us for our new full-day Enriched Dough Workshop, led by Kevan Roberts. This hands-on class is perfect for anyone looking to master the art of enriched dough and create delicious, showstopping bread at home.

Enriched dough is a type of bread dough that encompasses additional ingredients like butter, eggs, milk, and sugar, which give it a richer flavour and softer texture compared to standard bread dough.

What You'll Learn:

  • Japanese Milk Loaf: Discover the secret to this incredibly soft and fluffy bread using the tangzhong method, which involves making a roux to activate the gluten and create a light texture.
  • Chocolate Babka: Learn to make this rich, chocolate-filled bread with a beautiful twisted shape. You'll master the dough and filling and finish with a glossy sugar glaze.
  • Chelsea Buns: Perfect your skills with these classic British buns, filled with cinnamon sugar and currants and topped with a sweet glaze.
  • Classic Brioche: Create this buttery, soft bread perfect for sweet and savoury dishes. You'll learn to incorporate a generous amount of butter for that signature-rich flavour.

Kevan will guide you through each recipe, ensuring you achieve the perfect texture and flavour. By the end of the class, you'll have the confidence to bake these delightfully rich breads at home.

Refreshments will be available throughout the day, as well as a buffet-style lunch prepared by our catering team. All ingredients, equipment and recipes will be provided.

The School of Artisan Food is located on the Welbeck Estate in the heart of Sherwood Forest, Nottinghamshire, just a few minutes from the A1 and M1.

We make a conscious effort to reduce waste and packaging. Students are encouraged to bring their own containers to take food home.
